  • 4 cups whole milk

  • 2 large eggs
  • ½ cup heavy cream
  • 2 teaspoons vanilla extract
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ¾ cup raisins optional

Method
 

  1. Combine rice, milk, sugar, and salt in a saucepan.
  2. Simmer over low heat for 20–25 minutes.
  3. Whisk eggs and cream in a bowl.
  4. Temper eggs using 1 cup hot rice mixture.
  5. Return egg mixture to saucepan.
  6. Cook 5–8 minutes, stirring constantly.
  7. Remove from heat.
  8. Stir in vanilla, cinnamon, nutmeg, and raisins.
  9. Let rest for 10 minutes.
  10. Serve warm or chilled.
