- Step 1: Prepare the Crockpot
- Lightly spray the inside of the slow cooker with nonstick cooking spray.
- Step 2: Add the Chicken
- Place the chicken breasts into the bottom of the crockpot.
- Season with:
- garlic powder
- onion powder
- Italian seasoning
- salt
- black pepper
- Step 3: Make the Creamy Sauce
- In a medium bowl, whisk together:
- cream of chicken soup
- sour cream
- chicken broth
- Pour the mixture evenly over the chicken.
- Step 4: Prepare the Stuffing
- In another bowl, combine:
- stuffing mix
- melted butter
- chicken broth
- Mix gently until the stuffing is moistened.
- Step 5: Assemble
- Spread the stuffing mixture evenly over the creamy chicken layer.
- If using vegetables, add them before the stuffing layer.
- Step 6: Slow Cook
- Cover and cook:
- LOW for 6–7 hours
- OR
- HIGH for 3–4 hours
- The chicken should be fully cooked and tender.
- Step 7: Serve
- Shred the chicken slightly before serving if desired.
- Garnish with parsley and serve warm.
Notes
For extra flavor, use herb-seasoned stuffing mix.
Chicken thighs can be substituted for juicier meat.
Add cheese during the last 20 minutes for a creamy cheesy version.
Rotisserie chicken may be used for a faster cooking option.
Add a splash of broth if the stuffing becomes too dry.
